Healthy Protein Strawberry Muffins (Perfect for Lunchboxes and On-The-Go Snacks)

I’m a sucker for a healthy protein muffin. They’re such an easy grab-and-go snack, but I rarely buy them because so many store-bought muffins are loaded with refined sugars, white flours and ingredients that leave my tummy feeling awful afterwards.

So instead, I make these protein muffins at home on the weekend and freeze them. They’re perfect for busy mornings, lunchboxes for the kids, or a nourishing snack for me when I need something quick and satisfying.

This strawberry protein muffin recipe is one of my favourites. It’s naturally sweetened, easy to make and packed with protein and fibre to keep you feeling full and energised.

Why we love these protein muffins

These muffins are made with wholefood ingredients and quality protein, making them a more balanced option than traditional baked snacks. Using blended oats instead of refined flour keeps them gentle on digestion, while bananas and strawberries provide natural sweetness without added sugars.

They’re also freezer-friendly, which makes them ideal for meal prep and portion control.

Ingredients

1 cup rolled oats, blended into a flour
2 tablespoons chia seeds
1/2 cup At Health Radiant Vanilla or Vegan Vanilla Protein
1 teaspoon baking powder
2 eggs
1 1/2 ripe bananas, mashed
1 1/2 cups chopped frozen strawberries

Method

Preheat oven to 180 degrees Celsius. Blend the rolled oats until they form a fine flour. Add all ingredients to a bowl and mix well until combined. Spoon the mixture into a lined muffin tray. Bake for 20 to 30 minutes, or until the muffins have risen and a toothpick or knife inserted into the centre comes out clean.

Allow to cool slightly before enjoying.

How to enjoy and store

These muffins can be eaten warm or cooled. They also freeze really well, making them perfect for busy weeks. Simply defrost as needed for lunchboxes, snacks or a quick bite on the go.

Protein choice for baking

For baking, I personally prefer using At Health Australia Organic Plant Based Vanilla and Almond Protein or Radiant Body Protein with Collagen. I find plant-based proteins work particularly well in baked recipes, giving a better texture compared to whey-based proteins.

Optional flavour variation
