It’s back to school this week, which means it’s back to school lunches. But these flourless, easy to make healthy protein muffins are my all time fave protein snack on the go!
I regularly make these in the weekends and freeze them as these are great the kids lunchbox as they’re defrosted by the time lunch break comes ( plus they help keep their lunchbox cool ) … unless I’ve eaten them all 🙃 Enjoy!!
VANILLA PROTEIN MUFFINS
🔸 4 eggs
🔸 2 bananas ( mashed or quick blend )
🔸 1 cup At Health Radiant Body Protein Vanilla
🔸 1/4 Cup maple syrup
🔸 3 Tbsp Coconut Oil
🔸 2 tsp baking powder
🔸 3 Tbsp Tapioca Flour
🔸 1/2 cup chocolate chips
Blend wet ingredients then mix in dry ingredients… spoon into muffin trays then bake at 180 degrees for 20-30mim once muffins have risen and toothpick or knife inserted into the centre comes out clean 👍🏻
MINI MUFFINS - If you use small mini muffins you only need to cook for 8-10min.
Eat warm, or cool and freeze immediately so they stay fresh ( and for portion control ) 🙃😆
I pop frozen mini muffins in Milly’s lunchbox as they’ll defrost by morning tea 🙌🏼
