I’m a sucker for a healthy protein muffin 🍓 I find muffins such an easy snack on the go but I never buy them as they’re often loaded with sugar / refined sugars, white flours and my tummy feels awful afterwards… So I regularly make them in the weekends and freeze them as these are great the kids lunchbox or mine 🙃 I have a few fave protein muffin recipes up my sleeve and this one is a goodie, enjoy!!
1 cup rolled oats ( blended )
2 tbs chia seeds
1/2 cup @at.health vegan or radiant body vanilla protein**
1 tsp baking powder
2 eggs
1 1/2 bananas
1 1/2 cups chopped frozen strawberries
Blend and combine… then bake at 180 degrees for 20-30mim once muffins have risen and toothpick or knife inserted into the centre comes out clean 👍🏻
Eat warm, or cool or freeze for portion control 🙃😆
** I like our @at.health Organic Plant Based ( Vegan ) Vanilla & Almond or Radiant Body with Collagen for baking, personally I find the plant based proteins better for baking than our Whey Protein Isolate.
I also LOVE our @at.health Organic Plant Based Choc caramel fudge ( vegan ) and add some choc chips !! Nice way to mix up the recipe for double choc muffins 🙌🏼
