Best. Ever. Vegan. Caramel Protein Slice.

Ok I know what you're probably thinking... OMG that looks good, but I shouldn't. Well, yes you should. This is the BEST ever protein caramel slice. It's melt in your mouth good!

We're all about healthy, clean eating and keeping active but we're also 100% about finding a healthy balance. I love a vino in the evening and refuse to feel guilty when I enjoy a small treat every now and then. However, there's brownie (yum) points if you choose to enjoy treats that are made using raw, natural ingredients - rather than something processed using preservatives, colours and flavours.

This recipe gives you extra (yummy) brownie points as we use our Plant Based Protein + Superfood Blend which not only adds digestive enzymes, vitamins, minerals, protein, nutrients and amino acids but also helps to balance the natural sugar hit from the dates, so not only do these TASTE awesome but help to SATISFY that sweet craving.

Base:

1/2 Cup Walnuts

1/2 Cup Almonds

1/3 Cup Shredded Coconut

1/3 Cup Quinoa flakes

2 Medjool Dates (pitted)

4 Tbsp Coconut Oil (melted)

1/4 Cup Water

1 tsp Cinnamon

2 Tbsp At Health Australia Plant Based Protein 

 

Blend (using a food processor) nuts until they have crumbled. Add remaining ingredients to your nut crumble blend. Continue to blend until the mixture starts to stick together in a ball. Press into a small to medium sized, lined baking tray and place in the freezer.

 

Caramel Layer:

1 Cup Medjool Dates (pitted)

1 Tbsp At Health Australia Plant Based Protein 

1 Tbsp Almond Butter or Tahini

1 tsp Lucama Powder

1 Tbsp Maple Syrup (swap for rice malt syrup to reduce fructose)

2 Tbsp Coconut Oil (melted)

1/3 Cup Almond Milk

 

Blend all ingredients until smooth and then spread over base layer and put in the freezer. Now onto the 3rd and final bit….

Chocolate Layer:

1/3 Cup Cacao Powder

1/4 Cup Coconut Oil (melted)

1/4 Cup Cacao Butter

1/4 Cup Maple Syrup (natural)

 

Blend all ingredients and spread over the top of the base and caramel layers. Once evenly spread, freeze for a few hours until the chocolate has set. Cut into squares using a warm sharp knife. Serve and try to enjoy in moderation! It may be natural, but we still believe all good things in moderation – yes, even clean treats!!

Tip:: Store in an airtight container in the freezer and take out five mins before eating to defrost - This may also help portion control :)
