 Raw Cashew Lemon Cheesecake


Our 'At Health Australia' Raw Cashew Lemon Cheesecake combines our Naturally Vanilla protein with wholefood goodness including Macadamia Nuts, Cashews, Lemon and Coconut to create the ultimate raw dessert that will go down a treat with friends.

Base  Layer

1/4 of desiccated coconut (unsweetened)
¼ Cup of Macadamia Nuts
¼ Cup of Buckinis
¼ Cup of 'At Health Australia' Naturally Vanilla Protein 
¼ Cup of melted Coconut Oil
1 Tbsp of Rice Malt Syrup
3 Medjool Dates
1-2 Tbsp of water


Top  Layer

1 Cup Cashews ( soaked over night )
¼ Cup Lemon Juice freshly squeezed
¼ Cup of freshly squeezed orange/lime (depending on the sweetness/sourness you would like)
1 Tbsp of Lemon Zest
2 Tbsp of Rice Malt Syrup
1 Tbsp Baobab Powder (optional - gives a slightly tangy taste).

How  to  Make

Combine the base ingredients in a food processor or blender until they are crumbled and starting to stick together, then press into lined tray and the put in freezer to set. 
While the base is setting, combine the top layer ingredients in a food processor and blend until a smoothe consistency. Once you have the ideal consistency, pour over the base, and put back into the freezer to set.
Once set, cut into slices and enjoy with friends and a hot cup of tea.
